Ice Cream Roll

Ingredients:

  1. 3 - eggs
  2. 3/4 cups - sugar
  3. 1 teaspoons - baking powder
  4. 1/2 cups - flour
  5. 1/4 cups - cocoa
  6. - softened ice cream
  7. - nuts, broken peppermint candy pieces, candy bar pieces optional, for rolling up with
  8. - powdered sugar optional, for rolling
  9. 3 - eggs
  10. 3/4 cups - sugar
  11. 1 teaspoons - baking powder
  12. 1/2 cups - flour
  13. 1/4 cups - cocoa
  14. - softened ice cream
  15. - nuts, broken peppermint candy pieces, candy bar pieces optional, for rolling up with
  16. - powdered sugar optional, for rolling

Directions:

Line a large cookie sheet with buttered wax paper.

Mix dry ingredients together. Add eggs.

Spread on waxed cookie sheet. Bake at 375° F for 12 to 15 minutes.

Remove cake from wax paper and roll into a dish towel to cool. Unroll when cool.

Spread with softened ice cream (don't spread ice cream too thick). Can add nuts, broken peppermint candy pieces, candy bar pieces; sprinkle over ice cream and re-roll cake. Can be rolled in powdered sugar.

Wrap tightly in foil or plastic wrap and place in freezer. Cut into slices before serving.
