Ingredients:
- 4 - or 5 potatoes peeled, sliced in 1/2-inch round slices
- 8 ounces - sour cream
- 1 tablespoons - minced dried onion
- 2 tablespoons - dried parsley for color
- 4 ounces - shredded sharp cheddar cheese about 1 cup
- 1/2 sticks - melted butter
Directions:
Boil the potato slices until almost done; drain.
While potatoes are cooking, combine remaining ingredients and microwave, stirring every minute or two, just 'til cheese is beginning to melt well.
Place drained potatoes in a lightly buttered glass baking dish that has a GLASS lid that fits tightly. Pour cheese mixture over potatoes, gently moving potatoes with a spoon, so sauce can drain down through potatoes.
Cover with the glass lid. Bake at 350 degrees F for 45 minutes. The secret to success is the GLASS lid (I don't know why - trust me).
