Ingredients:
- - pinch of sea salt
- 1/4 cups - quinoa
- 1/3 cups - quick-cooking barley
- 1/2 cups - old-fashioned oatmeal
- 1 cups - sliced fresh strawberries divided
- 1 cups - fresh blueberries divided
- 1/2 teaspoons - ground cinnamon
- 1 teaspoons - raw honey
- 1 ounces - vanilla protein powder
- 1/2 teaspoons - pure vanilla extract
- 1/4 cups - low-fat milk
- 15 - walnut halves chopped
Directions:
1. In a 2-quart saucepan, bring 2-1/2 cups water to a boil on medium-high heat. Add salt and quinoa and cook for 5 minutes; then stir in barley and cook for an additional 5 minutes. Stir in oatmeal and cook for 5 more minutes. Drain excess water and set grains aside in a small bowl.
2. Meanwhile, in a small saucepan on medium-high heat, add 1/2 cup strawberries, 1/2 cup blueberries, 1 tablespoon water, cinnamon and honey. Cook, stirring frequently, until fruit breaks down into a chunky sauce, about 5 minutes. Set aside.
3. In a separate small bowl, combine protein powder, vanilla and milk. With a rubber spatula, gently fold milk mixture into cooked grains.
4. Divide grain mixture among 3 serving bowls and top with remaining 1/2 cup strawberries and 1/2 cup blueberries, berry sauce and walnuts, dividing evenly.
