Ingredients:
- 4 - dried black oriental mushrooms
- 1/4 pounds - ham slivered
- 1/2 cups - slivered bamboo shoots
- 1 tablespoons - soy sauce
- 4 cups - chicken broth
- - salt and white pepper to taste
- 1 cups - thinly sliced tofu
- 3 tablespoons - red wine vinegar
- 2 tablespoons - cornstarch mixed with 3 T cold water
- 1 - egg slightly beaten
- 1 teaspoons - sesame oil
- 1 - scallion including top cut into 2-inch diagonal slices
Directions:
Soften mushrooms in warm water; drain. Remove and discard stems.
Slice mushroom caps and combine in a large saucepan with ham, bamboo shoots, soy sauce and broth. Bring to a boil.
Reduce heat and simmer 3 minutes; season to taste. Add tofu and vinegar and bring to boil again.
Add dissolved cornstarch and cook, stirring constantly, until soup is slightly thickened. While stirring gently, slowly add egg. Remove from heat and add oil.
