Ingredients:
- 1 pounds - ground pork OR beef OR turkey
- 1 teaspoons - dried parsley
- 1 teaspoons - paprika
- 1/2 teaspoons - kosher salt
- 1/2 teaspoons - dried oregano
- 1/2 teaspoons - fennel seeds OR ground fennel
- 1/2 teaspoons - garlic powder
- 1/4 teaspoons - dried rosemary, crushed
- 1/8 teaspoons - black pepper
- 1/8 teaspoons - dried thyme
- 1/8 teaspoons - red pepper flakes, or to taste
Directions:
Combine all ingredients in a large bowl and mix well.
Cover & refrigerate at least 4 hours or up to 24 hours.
Cook in a skillet until no pink remains.
Notes:
Fennel seeds are used in order to give the sausage its signature flavor. You can use either whole or ground fennel, whichever you tend to have on hand.
You can double this recipe, and then freeze half of the uncooked mixture for future use.
The sausage can be formed into patties before cooking. For patties, cook over medium heat about 4-5 minutes per side or until cooked through.
Optional add-ins to consider:
1-2 teaspoons brown sugar
1/8 teaspoon cayenne pepper
1/8 teaspoon smoked paprika
