Ingredients:
- 1 - egg beaten
- 2 tablespoons - milk
- 1/2 teaspoons - salt
- 1 cups - flour
- - cornstarch
- 2 quarts - water boiling
- 2 teaspoons - salt
Directions:
Mix together egg, milk and salt. Gradually add flour to form a very stiff dough.
Knead for approximately 10 minutes; let dough rest for 10 minutes.
Roll dough as thinly as possible over a floured surface. Sprinkle lightly with cornstarch.
Roll dough up like a jelly roll. Slice dough crosswise in 1/4-inch lengths. Unroll noodle dough slices.
Spread to dry for 1-1/2 to 2 hours (or drying time can be decreased by placing noodles on a cookie sheet in a warm oven that is not over 212° F).
Bring 2 quarts of water and 2 teaspoons salt to boiling; drop noodles in boiling water and stir. Cook, uncovered, for 10 minutes.
Drain and serve.
