Ingredients:

  1. 2 1/2 pounds - beef eye round roast
  2. 6 tablespoons - flour divided
  3. 1 tablespoons - canola oil
  4. 1 1/2 cups - water
  5. 1/3 cups - water
  6. 1 1/2 cups - dry red wine or reduced-sodium beef broth
  7. 2 teaspoons - beef bouillon granules
  8. 1/4 teaspoons - pepper
  9. 2 pounds - small red potatoes halved
  10. 3/4 pounds - med carrots (about 4) halved lengthwise and cut into 2 in pieces
  11. 2 - med onions quartered
  12. 1/2 teaspoons - salt
  13. 1/2 teaspoons - browning sauce

Directions:

Coat the roast with 2 tbsp flour. In a large nonstick skillet, brown roast on all sides in oil over med-high heat; drain. Add 1-1/2 c. water, wine, bouillon and pepper. Bring to a boil. Reduce heat; cover and simmer for 2 hours. Add the potatoes, carrots and onions; cover and simmer for 45 mins or until meat and vegetables are tender. Remove meat and vegetables; keep warm. Pour pan juices into a measuring cup; skim fat. Add enough water to measure 2 c. In a small saucepan, combine remaining flour and water until smooth. Stir in salt and browning sauce if desired. Gradually stir in the 2 c pan juices. Bring to a boil; cook and stir for 2 mins or until thickened. Serve with roast and vegetables.
