Holiday Pumpkin Bread

Ingredients:

  1. 3 1/2 cups - flour (I use King Arthur all-purpose)
  2. 1 teaspoons - baking powder
  3. 2 teaspoons - baking soda
  4. 1 teaspoons - ground cloves
  5. 1 teaspoons - ground cinnamon
  6. 1 teaspoons - ground nutmeg
  7. 1/2 teaspoons - salt
  8. 2 cups - solid packed pumpkin (NOT pumpkin pie filling)
  9. 1 cups - Crisco oil
  10. 3 cups - sugar
  11. 3 - eggs
  12. 1 cups - chopped walnuts
  13. 1 cups - raisins

Directions:

Preheat oven to 350 degrees F. Spray two 9-x-5-x-3-inch loaf pans with Pam or baking spray.

In a medium bowl, mix together flour, baking powder, baking soda, cloves, cinnamon, nutmeg and salt. Set aside.

In the bowl of an electric mixer (or a hand mixer is fine, too), combine the pumpkin Crisco oil, sugar and eggs. Mix until well blended.

Add dry ingredients and mix well. By hand, stir in the walnuts and raisins.

Divide batter between prepared pans. Bake 50-55 minutes or until toothpick inserted in center comes out clean. (I've been baking this bread for years and it takes more like 75-80 minutes; I advise beginning to watch it at the 60-minute mark, then baking an additional 5 to 10 minutes more after each check).
