Ingredients:
- 1 - 6 to 8 pound cooked ham
- 1 - recipe Glaze variation see below
- 1 cups - apricot preserves
- 1 tablespoons - rice vinegar
- 1 tablespoons - Chinese style mustard
- 1 teaspoons - grated fresh ginger
- 1/2 cups - finely chopped onion
- 2 cloves - garlic minced
- 1 tablespoons - hot olive oil
- 3/4 cups - bottled chili sauce
- 1/2 cups - pomegranate juice
- 1/4 cups - honey
- 1 tablespoons - balsamic vinegar
- 1/2 teaspoons - dry mustard
- 1/4 teaspoons - ground black pepper
- 1 cups - cranberry relish
- 1/4 cups - orange juice
- 1 teaspoons - snipped fresh thyme or sage
Directions:
For Ham:
Preheat oven to 325 degrees F. Score ham by making shallow diagonal cuts in a diamond pattern at 1-inch intervals. Place ham on a rack in a shallow roasting pan. Insert an oven-safe thermometer into center of ham (thermometer should not touch the bone). Cover with foil.
Bake for 1-1/4 hours. Uncover; bake for 20 to 60 minutes more or until thermometer registers 140 degrees F. Meanwhile, prepare glaze (variation recipes below). Brush ham with some of the glaze during last 20 minutes of baking. Serve with remaining glaze.
Apricot Mustard Glaze:
Stir together apricot preserves, rice vinegar, Chinese style mustard, and grated fresh ginger until thoroughly combined.
Pomegranate BBQ Glaze:
In a small saucepan cook onion and garlic in olive oil over medium heat for about 2 minutes or until onion is tender. Stir in chili sauce, pomegranate juice, honey, balsamic vinegar, dry mustard and black pepper. Bring to boiling; reduce heat. Simmer, uncovered, for 20 minutes.
Cranberry Orange Glaze:
In a small saucepan combine cranberry relish, orange juice and fresh thyme or sage. Bring to boiling; reduce heat. Simmer, uncovered, for 5 to 10 minutes or until mixture is thickened to glazing consistency.
