Ingredients:
- 1/4 cups - Olive oil
- 2 - Large eggs Beaten
- 1 cups - Chicken (optional) Grilled, chopped
- 1/2 cups - Green onions Chopped
- 2 tablespoons - Garlic Chopped
- 2 cups - White rice Cooked
- 3 tablespoons - Soy sauce
Directions:
1. Heat skillet over medium-high heat.
2. Add olive oil.
3. Cook and stir eggs until cooked through, 2 to 3 minutes.
4. Add chicken (optional), green onion, and garlic.
5.Cook and stir until heated through, about 2 minutes.
6. Mix rice into egg mixture and stir until rice is warmed, about 2 minutes.
7. Add soy sauce.
8. Cook and stir until rice is evenly coated, about 3 minutes
