Herbed Flatbread Pizza

Ingredients:

  1. 2 - medium tomatoes
  2. 1 - medium zucchini
  3. 1 - red bell pepper
  4. 1 - garlic clove, minced
  5. 2 tablespoons - extra virgin olive oil
  6. 4 - sheets lavash or large flour tortillas
  7. 1/3 cups - mixed chopped herbs, such as oregano, basil, parsley and chives
  8. 1 cups - sliced mushrooms
  9. 1/3 cups - sliced red onion
  10. 1/4 cups - grated parmesan cheese
  11. 3/4 cups - shredded mozerella cheese
  12. 1/2 teaspoons - each kosher salt and pepper
  13. 1 cups - loosely packed arugula

Directions:

Preheat oven to 400 degrees with pizza stone or inverted baking sheet on middle rack.

Thinly slice tomatoes, zucchini and pepper. Mix garlic with olive oil and brush onto lavash. Scatter half the herbs, all the vegetables, and both cheeses over the lavash.

Slide the lavash onto stone and bake until cheeses are melted and crust is crisp, about 5 minutes. Remove from oven and sprinkle with salt, pepper, remaining herbs, and the arugula. Cut into large squares.
