I purchase the frozen cod loins at Sams or Costco, thaw in the fridge, and then bake as directed above.

Ingredients:
- 10 - cod loins
- 1 cups - fine bread crumbs
- 4 cups - panko-style bread crumbs
- 1/4 cups - fresh parsley chopped
- 1/4 cups - fresh oregano chopped
- 2 tablespoons - fresh rosemary chopped
- 1 cups - melted butter
Directions:
Combine bread crumbs, herbs, and butter, and season with salt and pepper. Place loins in a foil-lined sheet pan and top each one with some crumb mixture (I pat the mixture onto the top of each one to make sure they are thickly coated). Bake at 375° for 20-25 minutes. Serves nicely with rice pilaf and buttered mixed vegetables.
