Herb Baked Scallops

  1. 2 pounds - fresh bay scallops (or sea scallops cut in small pieces)
  2. 1/2 cups - butter
  3. 2 tablespoons - minced parsley
  4. 1 1/2 teaspoons - basil crumbled
  5. 1 teaspoons - salt
  6. 1/4 teaspoons - pepper
  7. - hot cooked baked or mashed potatoes optional


Wash scallops in cold water; drain on paper towels. Put in single layer in shallow 1-1/2 quart baking dish.

Dot with butter; sprinkle with parsley, basil, salt and pepper. Bake at 350 degrees for 5 minutes. Stir scallops to coat well with butter mixture. Bake about 20 minutes or just until tender.

Serve buttery sauce over mashed or baked potatoes.
