Henrici Coffee Cake

Ingredients:

  1. 3/4 cups - shortening
  2. 1 1/2 cups - sugar
  3. 3 - eggs
  4. 3 cups - flour
  5. 3 teaspoons - baking powder
  6. 1 cups - milk
  7. 2 tablespoons - lemon juice
  8. 1/2 cups - chopped pecans
  9. - powdered sugar for topping

Directions:

Cream together shortening and sugar.

Add eggs and beat well.

Alternately add flour and baking powder with milk and lemon juice.

Sprinkle pan with chopped pecans. Pour in batter. Bake at 350 degrees F for 1 hour.

Sprinkle with powdered sugar after baking.
