Healthy Peanut Butter Cups

Ingredients:

  1. 1 sticks - organic butter
  2. 1/4 cups - cocoa powder
  3. 2 teaspoons - Stevita brand stevia
  4. 1/2 cups - xylitol
  5. 1/2 teaspoons - salt
  6. 1/2 cups - Valencia peanut butter
  7. 2 tablespoons - Vitol brand egg powder
  8. 1/8 teaspoons - salt
  9. 3/4 teaspoons - stevia
  10. 1 tablespoons - xylitol
  11. 1/4 cups - Valencia peanut butter
  12. 1 tablespoons - butter softened
  13. - cupcake paper liners

Directions:

For chocolate:
In a saucepan, melt butter over low heat. Remove from heat. Add cocoa, stevia, xylitol and salt. Mix well. Stir in peanut butter until smooth. Set aside.

For peanut butter filling:
Combine egg powder, salt, stevia and xylitol. In a separate bowl mix peanut butter and butter together. Add egg powder mixture to peanut butter. Stir well.

Pour enough chocolate in cupcake paper to coat bottom of paper. Spoon a little of the peanut butter on top. Cover with chocolate mixture.

Must be kept in refrigerator.
