Ingredients:
- 3 tablespoons - oil
- 2 - large ribs of celery sliced diagonally
- 3 cups - cold cooked rice
- 4 - medium green onions and tops cut into 1-inch pieces
- 1 cups - cooked ham, shrimp or chicken cut into 1-inch strips
- 1/2 cups - frozen peas optional
- 1/2 cups - sliced water chestnuts
- 1/2 tablespoons - soy sauce
- 2 - eggs beaten
- - soy sauce for serving
Directions:
In a skillet, heat oil. Fry green onion and celery over high heat about 2 minutes.
Add rice and stir to coat with oil.
Add ham, peas, water chestnuts and soy sauce; heat through.
Add eggs, stirring until set.
Serve at once. Pass the soy sauce.
