Ham, Shrimp or Chicken Fried Rice

Ingredients:

  1. 3 tablespoons - oil
  2. 2 - large ribs of celery sliced diagonally
  3. 3 cups - cold cooked rice
  4. 4 - medium green onions and tops cut into 1-inch pieces
  5. 1 cups - cooked ham, shrimp or chicken cut into 1-inch strips
  6. 1/2 cups - frozen peas optional
  7. 1/2 cups - sliced water chestnuts
  8. 1/2 tablespoons - soy sauce
  9. 2 - eggs beaten
  10. - soy sauce for serving

Directions:

In a skillet, heat oil. Fry green onion and celery over high heat about 2 minutes.

Add rice and stir to coat with oil.

Add ham, peas, water chestnuts and soy sauce; heat through.

Add eggs, stirring until set.

Serve at once. Pass the soy sauce.
