Ham Biscuits

Ingredients:

  1. 2 cups - all-purpose flour plus more for surface
  2. 2 teaspoons - baking powder
  3. 1 teaspoons - baking soda
  4. 1 teaspoons - kosher salt
  5. 1/2 teaspoons - freshly ground black pepper
  6. 5 tablespoons - very cold unsalted butter cut into cubes
  7. 1/4 cups - fresh dill finely chopped
  8. 1 cups - extra-sharp cheddar cheese coarsely grated
  9. 3/4 cups - buttermilk
  10. 2 tablespoons - heavy cream
  11. 8 ounces - sliced cooked ham
  12. 2 cups - baby arugula
  13. - desired mustard or sauces for serving with

Directions:

1. Heat oven to 375 degrees F and line a large baking sheet with parchment paper (or lightly grease). In a large bowl, whisk together flour, baking powder, baking soda, salt and pepper.

2. Rub butter into flour mixture until it resembles fine crumbs; toss with dill and 3/4 of the cheddar.

3. Using a fork, quickly fold buttermilk into flour mixture to make a shaggy dough.

4. Transfer to lightly floured surface and gently knead a few times to just bring together. Roll dough into 3/4-inch thick rectangle, fold in half, rotate 90 degrees, and repeat rolling, folding and turning 4 more times. On final turn, roll to 1/2-inch thick.

5. Using a lightly floured 2-1/2 inch round cutter, cut out biscuits and transfer to prepared baking sheet. Place any scraps of dough on baking sheet. Brush tops with heavy cream and sprinkle with remaining cheese.

6. Bake until light golden brown, about 15 to 18 minutes.

7. Make sandwiches with ham, arugula and condiments, as desired.
