Ingredients:
- 1 tablespoons - butter
- 2 tablespoons - olive oil
- 2 - medium onions chopped
- 1 - medium green pepper chopped
- 3 stalks - celery chopped
- 3 cloves - garlic minced
- 3/4 pounds - turkey ham cubed
- 1 pounds - turkey smoked sausage sliced
- 2 cups - long grain rice uncooked
- 1 pounds - canned tomatoes cut up
- 3 cups - beef stock
- 1/2 teaspoons - pepper
- 1/4 teaspoons - cayenne
- - salt
- 12 - green onions chopped
- 1/2 cups - minced parsley
Directions:
In a heavy stock pot, heat oil and butter over medium-high heat; add onions, green pepper, celery and garlic. Cook 5 minutes or until wilted and transparent. Add meats; cook until they are browned, stirring occasionally about 8 minutes.
Add rice and cook until lightly browned, about 5 minutes. Add tomatoes, stir, adding stock and seasonings. Reduce heat. Cover and simmer until rice is tender (as with any other rice, do not stir during this simmering process) approximately 45 minutes.
Taste for seasoning and add green onions and parsley; cover and cook 3 minutes more. Remove from heat and serve hot.
Can serve with hot sauce if you like spicier.
