Ham and Grits Quiche with Two Cheeses

Ingredients:

  1. 1 tablespoons - butter
  2. 1/2 cups - chopped mushrooms
  3. 1/4 cups - chopped onion
  4. 2 cups - whipping cream
  5. 4 - eggs beaten to blend
  6. 1/2 teaspoons - dry mustard
  7. 1/4 teaspoons - cayenne pepper
  8. 1/4 teaspoons - freshly grated nutmeg
  9. 1/2 cups - grated Swiss cheese
  10. 1/2 cups - grated cheddar cheese
  11. 1 - baked pie crust (9-inch)
  12. 1/2 cups - cooked ham chopped
  13. 3 - sausage links cooked and chopped
  14. 3 slices - bacon chopped and cooked
  15. 1/2 cups - cooked quick-cooking grits

Directions:

Melt butter in heavy medium skillet over medium heat. Add mushrooms and onion and cook until softened, stirring frequently, about 5 minutes.

Combine next 5 ingredients in medium bowl. Set aside. Combine cheese in another bowl.

Preheat oven to 375 degrees F. Place crust on baking sheet. Sprinkle ham and sausage on bottom of crust. Top with half of cheese and all of bacon.

Spoon mushroom mixture over. Top with grits. Sprinkle with remaining cheese.

Pour cream mixture over. Bake quiche until top is puffed and browned, about 40 minutes.
