Ingredients:
- 2 tablespoons - soy sauce
- 2 teaspoons - sesame oil
- 4 teaspoons - canola oil divided
- 2 - eggs lightly beaten
- 1 tablespoons - fresh gingerroot peeled, finely chopped
- 2 - garlic cloves finely chopped
- 4 cups - cooked rice chilled
- 2 cups - frozen peas and carrots
- 3/4 cups - ham cubes
- 1/4 cups - sliced green onions
Directions:
In a small bowl combine soy sauce, sesame oil, and pepper to taste. Set aside.
Brush a 12-inch nonstick skillet or wok with 1 teaspoon of the canola oil. Add eggs to skillet. Cook and stir over medium heat, breaking eggs into small pieces or shreds. Remove eggs; set aside. Wipe skillet with paper towels.
Add remaining 3 teaspoons canola oil to skillet. Add ginger and garlic; cook and stir 1 minute. Add chilled rice, and peas and carrots; cook and stir 8 minutes.
Sprinkle soy sauce mixture on rice mixture in skillet. Cook 5 minutes, lifting and turning rice mixture occasionally. Add ham; cook and stir 1 minute more or until heat through. Stir in green onions and cooked eggs; heat through. Serve immediately.
