Ingredients:
- 2 cups - Long-grain white rice
- 6 tablespoons - Soy sauce
- 2 tablespoons - Oyster sauce
- 2 teaspoons - Sesame oil
- 4 tablespoons - Peanut oil or canola oil
- 1 whole - Red bell pepper Diced
- 2 whole - Zucchini Diced
- 1 cups - Frozen green peas Thawed
- 4 cloves - Garlic Minced
- 4 - Thin ham slices Finely chopped
- 4 whole - Large eggs
Directions:
1. Bring 3 C of water to a boil in a saucepan. Stir in the rice and keep stirring until the water returns to a boil. Cover the pot w/ a tight-fitting lid, reduce the heat to very low and simmer gently for 15 min. Leave the rice to cool, preferably in the refrigerator overnight.
2. Mix together soy sauce, oyster sauce and sesame oil in a small bowl and set aside.
3. Heat a wok or large skillet over high heat and add peanut oil. Add bell pepper and cook, stirring for 2 min. Add zucchini and cook, stirring for 2 min. Add peas and garlic and stir for 30 sec., then add ham and eggs and stir for another minute. Add the rice and stir, tossing to separate the grains, and combine well for a minute.
4. Add the sauce mixture; cook, stirring for 2 min. and serve.
