Ingredients:
- 2 pounds - stewing beef lean
- 3 tablespoons - oil
- 2 tablespoons - flour
- - salt
- - pepper
- 1 pinchs - cayenne
- 2 - onions large, coarsley chopped
- 1 cloves - garlic crushed
- 2 tablespoons - tomato puree dissolve in 4 tbls of water
- 1 1/4 cups - Guiness
- 2 cups - carrots chunked
- 1 sprigs - thyme
Directions:
Trim the meat of fat and cut into cubes of 2". Put in a bowl with 1 tablespoon of oil. Season the flour with salt, pepper and a pinch or 2 of cayenne. Put the meat into the flour mixture.
Heat remaining oil in wide frying pan over high heat. Brown the meat on all sides. Add onions, crushed garlic, and tomato puree to the pan.
Cover and cook gently for about 5 minutes.
Transfer contents to a casserole dish.
Put some Guiness into the frying pan. Bring to a boil and stir to dissolve the carmelized meat juices. Pur onto the meat with the remaining Guiness. Add the carrots and the thyme.
Stir, taste and add more salt if needed. Cover and simmer very gently until the meat is tender (approximately 2-3 hours). The stew may cook on the stove or in an oven at 300 degrees.
