Ingredients:
- 2 pounds - Carrots
- 2 tablespoons - Butter
- 1 - Onion medium
- 8 ounces - Cheddar cheese grated
- 1/2 teaspoons - Salt
- 1/8 teaspoons - Black pepper
Directions:
Pare, slice and boil carrots. Mash well then stir in butter, onion, cheese and seasonings. Place in buttered casserole. (I like to top with butter and bread crumbs)
Bake at 350 degrees F for 40 minutes until bubbling.
