Grilled Red Onion, Tomato and Avocado Salad with Avocado Vinaigr

Ingredients:

  1. 1 - red onion cut into 8 slices
  2. 1/4 cups - canola oil
  3. 1/8 cups - sherry vinegar
  4. 3/4 teaspoons - coarse salt
  5. - freshly ground pepper
  6. 2 - large ripe tomatoes cored, cut into 4 slices each
  7. 2 - ripe avocados peeled, seeded, cut into 8 slices each
  8. 1 - ripe avocado peeled, seeded, coarsely chopped
  9. 1 tablespoons - sherry vinegar
  10. - juice of 3 limes
  11. 1/2 teaspoons - coarse salt
  12. - freshly ground pepper
  13. 2/3 cups - canola oil

Directions:

Combine onion, oil, vinegar, 1/2 teaspoon salt and pepper to taste in a bowl; marinate 10 minutes. Heat a grill pan or skillet; grill the onions 2 minutes per side. Set aside.

Place 2 tomato slices side by side on each of 4 plates. Season with 1/4 teaspoon salt and pepper to taste. Top each plate with 4 avocado slices. Top each plate with 2 onion slices.

For vinaigrette, place avocado, vinegar, lime juice, salt and pepper in a blender. Blend, slowly pouring the oil into the blender. Drizzle the vinaigrette on the salad and around the plate.
