Grilled Lemon Chicken

Ingredients:

  1. 6 - boneless skinless chicken breast halves 6 ounces each
  2. 1/2 cups - plus 1 tablespoon lemon juice
  3. 6 tablespoons - olive oil
  4. 3 tablespoons - minced fresh parsley
  5. 3 tablespoons - grated lemon peel
  6. 1 1/2 teaspoons - minced garlic
  7. 3/4 teaspoons - salt
  8. 3/4 teaspoons - dried thyme
  9. 3/4 teaspoons - dried marjoram
  10. 3/4 teaspoons - pepper

Directions:

In a small bowl combine all the marinade ingredients. Pour 1/3 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for up to 1 hour. Cover and refrigerate remaining marinade.

Drain and discard marinade. Grill chicken, covered, over medium heat for 5-8 minutes on each side or until a meat thermometer reads 170 degrees F, basting occasionally with reserved marinade.
