Ingredients:
- 4 - halibut steaks (6 oz. each)
- Butter Sauce Mixture
- 1/4 cups - butter, softened
- 1 - canned chipotle chile in adobo sauce, chopped
- 1 teaspoons - adobo sauce (from can of chipotle chiles)
- 1 teaspoons - lime juice
- Seasoning Mixture
- 1 tablespoons - olive oil
- 1 teaspoons - chili powder
- 1/2 teaspoons - garlic salt
- 1/2 teaspoons - ground cumin
Directions:
Heat up a gas or charcoal grill. (If you don't have a grill, scroll below for Broiling directions.)
In a small mixing bowl, mix together the butter, chile, adobo sauce, and lime juice. Refrigerate until serving time.
In another small bowl, mix together the oil, chili powder, garlic salt and cumin (OR mix oil with your favorite Cajun seasoning). Brush both sides of each halibut steak with oil mixture and allow to sit at room temperature for 10 minutes.
Place halibut on heated grill over medium heat. Cover grill; cook 10 to 15 minutes (depending on thickness of fish), turning once or twice, until fish flakes easily with fork.
Remove butter mixture from fridge and heat in microwave for about 10 seconds, just to start it melting.
Serve halibut topped with warmed butter mixture.
Optional Alternative - Broiling Directions:
After mixing together the butter mixture and setting aside, and seasoning halibut and letting it sit at room temperature for a few minutes, place the halibut steaks on a broiler pan. Broil 4-6 inches from heat, for about 10-12 minutes, turning once or twice as needed.
