Grilled Corn with Chipotle Butter

  1. 1 sticks - butter softened
  2. 1 tablespoons - chipotle in adobo chopped
  3. 1/4 teaspoons - chipotle chile powder
  4. 4 ears - corn on the cob cut in half
  5. 2 tablespoons - extra virgin olive oil
  6. - salt to taste


In a small bowl, mix butter with chipotle in adobo and chipotle chile powder until thoroughly combined.

In a large bowl, toss corn with olive oil and season with salt. Grill over a hot grill for 1 to 2 minutes per side, until caramelized.

Remove corn from grill and brush with chipotle butter while still hot.
