Grilled Chicken with Pineapple

Ingredients:

  1. 6 - chicken breasts skinless, boneless
  2. 1/2 cups - olive oil
  3. 1/2 cups - passion-fruit vodka
  4. 3 tablespoons - Weber Kick'n Chicken Seasoning or other spice/seasoning
  5. 1 whole - pineapple sliced into rings

Directions:

Mix together olive oil, vodka, and chicken seasoning. Place chicken breasts in ziploc bag; pour in marinade mixture, shake well to coat chicken, and let sit for 30-45 minutes. Heat grill to medium-high heat and place chicken breasts on grill; top each chicken breast with one slice of pineapple and allow to cook. When time to flip over chicken breasts, place pineapple slices to side on grill, flip chicken and then top with pineapple slices again. Cook for 12-15 minutes or until cooked through. Serve over brown rice, if desired.
