Grilled Chicken Spinach Pizza

  1. 1 - boneless, skinless chicken breast
  2. 1/2 tablespoons - olive oil
  3. 1 cloves - garlic minced
  4. 1/2 cups - half and half or heavy whipping cream
  5. 1/4 teaspoons - xantham gum
  6. 1 cups - fresh spinach roughly chopped
  7. 1/2 cups - part skim shredded mozzarella
  8. 2 ounces - cream cheese
  9. 3/4 cups - shredded mozzarella
  10. 1 - egg beaten
  11. 1/4 teaspoons - garlic powder
  12. 1/3 cups - almond flour


For Crust:

Melt mozzarella and cream cheese in microwave for 30 second intervals, mixing often, until melted and combined well. In a separate bowl, mix together beaten egg, almond flour, and garlic powder.

Combine well and keep mixing until a sticky dough consistency is reached; refrigerate dough while preparing sauce and chicken.


Saute chicken in a skillet over medium heat until done. Remove and set aside. Add garlic and xantham gum to skillet with half-and-half; bring to a boil. Reduce heat to simmer when sauce starts to thicken. Fold in spinach and cook just until the spinach is wilted.

With hands, work dough out into a circle on a pizza pan; bake at 350 degrees F for 10 minutes. Spread sauce / spinach mixture onto cooked pizza crust, and top with chicken and shredded cheese. Bake 5 minutes more or until cheese is melted.

Allow to cool slightly before serving.
