Grilled Cheese Sandwiches on Cauliflower Bread

Ingredients:

  1. 2 - medium heads of cauliflower cut into small florets, stem removed
  2. 2 - large egg
  3. 1 cups - shredded Parmesan cheese
  4. 2 teaspoons - Italian herb seasoning
  5. 4 - thick slices of white cheddar cheese (or shredded cheddar)

Directions:

Preheat oven to 450 degrees F. Place cauliflower into food processor and pulse until you have small, fine crumbs.

Place cauliflower crumbs into microwave safe bowl and cook for 2 minutes; stir, mixing from bottom top and place back in microwave to cook for another 3 minutes.

Remove and stir again so all cauliflower cooks evenly; put back in microwave and cook for 5 minutes. Cauliflower should be starting to become more dry. Microwave again for 5 minutes, and now the cauliflower should be still slightly moist, but mostly dry and clumped together.

Allow cauliflower to cool for a few minutes; then add in egg and cheese. Stir to combine until smooth paste forms. Stir in seasoning.

Divide dough into four equal parts, and place those onto a large baking sheet lined with parchment paper. With your fingers, gently shape into square bread slices about 1/3-inch thick.

Bake cauliflower bread for about 15 to 18 minutes, until golden brown; remove from oven and let cool for a few minutes.

Using a sturdy spatula, gently slice bread slices off of parchment paper, so you can start making your sandwiches.

Place a slice of cheese between two slices of bread, and either cook on the stove top as you normally would for grilled cheese, or heat in a toaster oven or under broiler in the main oven, until heated through and cheese is melted.
