Grilled California Avocado Chicken

Ingredients:

  1. 3/4 cups - balsamic vinegar plus more for drizzling
  2. 1/4 cups - honey
  3. 3 cloves - garlic minced
  4. 2 tablespoons - olive oil
  5. 2 teaspoons - Italian seasoning
  6. 1/2 teaspoons - salt or more, to taste
  7. 1/4 teaspoons - pepper or more, to taste
  8. 4 - boneless, skinless chicken breasts
  9. 4 slices - mozzarella cheese
  10. 2 - avocados peeled, pitted, diced
  11. 3 - roma tomatoes (or any tomato) diced
  12. 1/4 cups - fresh chopped basil
  13. 3/4 cups - balsamic vinegar plus more for drizzling

Directions:

n a medium sized bowl whisk the balsamic vinegar, honey, garlic, olive oil, Italian seasoning, and salt and pepper. Add the chicken breasts and coat. Marinate for 30 minutes.

Meanwhile, in a small bowl add the avocado, tomato, basil and salt and pepper to taste. Set aside.

Heat the grill to medium high heat. Grill the chicken on each side about 6 minutes or until cooked throughout and no longer pink.

Top with mozzarella cheese and avocado, tomato basil mixture. Drizzle with balsamic vinegar and serve immediately.
