Ingredients:
- 8 - chicken thighs skinned
- 1/4 teaspoons - smoked paprika
- 1 tablespoons - lemon juice
- 1 - ripe mango peeled, coarsely grated
- 2 tablespoons - chopped cilantro
- 1/2 teaspoons - salt
- 2 tablespoons - lime juice
- - a good twist of black pepper
- 1/4 - white cabbage shredded
- 2 - large carrots peeled, grated
- 1 - small red onion peeled, thinly sliced
- 1 tablespoons - white wine vinegar
- 1 tablespoons - lime juice
Directions:
1. Remove the bones from the chicken thighs, using a small knife, and trim off all visible fat from the edges. Place them in a shallow bowl, add the smoked paprika and lemon juice and mix together well.
2. Preheat the broiler to its highest setting or alternatively use a griddle. Cook the chicken for 7 minutes; turn the thighs over and then continue to cook for another 5 minutes. Check that they're cooked through by skewering the thickest part, making sure the juices run clear, and then leave them to cool on a board.
3. Make the mango dressing by mixing together the mango dressing ingredients; set aside.
4. Make the coleslaw by mixing together the cabbage, carrots, red onion, vinegar, and lime juice with some seasoning in a large bowl.
5. Thinly slice the cooked chicken thighs and arrange on top of the coleslaw; spoon the mango dressing over the chicken and cover.
Keep in fridge until ready to eat.
