Green Salad with Apple, Feta & Pecans

Ingredients:

  1. 1/2 cups - Pecan pieces
  2. 2 tablespoons - Granulated Sugar
  3. 6 - Baby Spinach
  4. 1 heads - Red Leaf Lettuce
  5. 1 whole - Granny Smith Apple Cored and very thinly sliced
  6. 4 - Feta Cheese Crumbled
  7. 1/4 cups - Red Onion Finely chopped
  8. 3 tablespoons - Red Wine Vinegar
  9. 3 tablespoons - Balsamic Vinegar
  10. 1/2 cups - Olive Oil
  11. 2 tablespoons - Granulated Sugar
  12. 1 cloves - Garlic minced
  13. 1/4 teaspoons - Salt
  14. 1/4 teaspoons - Black pepper

Directions:

Place nuts in a medium skillet with 2 tablespoons sugar. Cook over medium-high heat until nuts are coated and brown, stirring constantly, about 4 minutes; set aside.

Toss salad greens, apples and cheese.
Combine dressing ingredients in a small jar and shake vigorously (I usually just use the blender). Pour over the salad just before serving.

Sprinkle with sugared nuts.
