Green Chili Cheese Casserole

Ingredients:

  1. 1/2 pounds - ground meat
  2. 1/2 cups - sliced green onions
  3. 1 cans - green chilies chopped, drained
  4. 1 cans - 12 oz. whole kernel corn with red and green peppers drained
  5. 1/2 pounds - Monterey Jack cheese shredded
  6. 1 teaspoons - salt
  7. 1/4 teaspoons - pepper
  8. 1 1/4 cups - milk
  9. 3 - eggs
  10. 3/4 cups - buttermilk baking mix

Directions:

Brown meat slowly in large skillet; add green onions, green chilies, corn, cheese, salt and pepper; mix thoroughly.

Beat together milk, eggs, and buttermilk baking mix until smooth.

Place meat mixture in greased baking dish. Pour milk and egg mixture over top and bake at 400 degrees F for 35 minutes.
