Green Chile Enchilada Casserole

Ingredients:

  1. 1 1/2 pounds - Ground Meat (beef, venison, elk or combo)
  2. 1/2 cups - Onion
  3. 2 cloves - Garlic
  4. 12 whole - Corn Tortillas
  5. - Oil for frying
  6. 2 cans - Cream of Mushroom soup or Chicken Broth
  7. 1 cups - Green Chile
  8. 1 cans - Ripe Black Olives
  9. 2 cups - cheddar or monterey jack cheese grated

Directions:

Brown meat, drain fat. Add onion and garlic; cook 5 minutes. Set aside.

Fry tortillas in oil; drain on paper towel. Set aside.

Mix soup and chile to make sauce; add olives.

Layer 1/2 of meat, 1/3 of cheese, tortillas, 1/2 of sauce, and repeat layers accordingly. Then top with remaining cheese. Cover casserole with foil. Bake at 350 for 35-45 minutes.
