Another option for the sauce is to use a ready-made enchilada sauce and simply add the green chilies and olives.

Ingredients:
- 1 1/2 pounds - Ground Meat (beef, venison, elk or combo)
- 1/2 cups - Onion
- 2 cloves - Garlic
- 12 whole - Corn Tortillas
- - Oil for frying
- 2 cans - Cream of Mushroom soup or Chicken Broth
- 1 cups - Green Chile
- 1 cans - Ripe Black Olives
- 2 cups - cheddar or monterey jack cheese grated
Directions:
Brown meat, drain fat. Add onion and garlic; cook 5 minutes. Set aside.
Fry tortillas in oil; drain on paper towel. Set aside.
Mix soup and chile to make sauce; add olives.
Layer 1/2 of meat, 1/3 of cheese, tortillas, 1/2 of sauce, and repeat layers accordingly. Then top with remaining cheese. Cover casserole with foil. Bake at 350 for 35-45 minutes.
