Ingredients:
- 6 - medium potatoes, yellow or russet chopped into 2-inch pieces
- 2 1/2 cups - chicken broth
- 1/2 cups - butter
- 1/2 cups - heavy cream, half and half, or milk plus a little more, if needed
- 7 ounces - chopped green chilies
- 1 teaspoons - kosher salt
- - freshly cracked pepper to taste
- 1 teaspoons - garlic powder
- 1 cups - shredded cheddar cheese
Directions:
Place the potatoes in a large pot with the chicken broth (use enough chicken broth to cover the potatoes) and bring to a boil; boil for about 10 minutes or so, until fork tender.
Drain the potatoes and place the pot with the potatoes back onto the warm burner; turn heat down to low. Mash the potatoes (either with a potato masher or a hand mixer). Add the butter, cream or milk, green chilies, half the cheddar cheese, and the seasonings. Continue mashing the potatoes over low heat until mixture is smooth and as creamy as you like (add a little more milk or butter, if needed, for consistency).
Place the potatoes in a baking dish and top with the remaining half of the cheddar cheese. Bake at 350 degrees F until cheese is melted, about 20 minutes.
