Number of Servings:

Ingredients:

  1. 12 ounces - fresh shiitake mushrooms stemmed and halved
  2. 2 teaspoons - finely shredded lemon peel
  3. 3 tablespoons - lemon juice
  4. 2 tablespoons - fresh thyme leaves
  5. - coarse sea salt and freshly ground black pepper
  6. 2 pounds - green beans trimmed
  7. 2 tablespoons - olive oil
  8. 2 tablespoons - butter
  9. 1/4 cups - thinly sliced shallots (2 medium)

Directions:

In a large pot, cook green beans in enough lightly salted boiling water to cover for 8 to 10 minutes or until crisp-tender; drain. Transfer to large bowl of ice water to stop the cooking process.

Meanwhile, in an extra-large skillet, heat oil and butter over medium heat. Add shallots, cooking until just tender, and stirring frequently. Add mushrooms; cook for 6 to 8 minutes or until tender, stirring frequently.

Add green beans to skillet; cook for 5 to 8 minutes or until heated through, tossing occasionally. Add lemon peel, lemon juice and thyme; toss to combine.

Season with salt and pepper, and serve.
