Green Beans, Grape Tomatoes, & Marinated Feta

    I prefer to use haricot vertes (a thin green bean or french green bean) since they are usually more tender than most fresh green beans and usually do not need to be snapped. I get my marinated feta at Central Market, but it can probably be found at specialty cheese stores. If it is unavailable, just using plain feta cheese will do. It is easy to over oil the vegetables, making them greasy when served. Start with a very small amount and add more to just barely coat the vegetables. Amounts are approximate and can be adjusted to taste.

Ingredients:

  1. 1 pounds - fresh green beans cleaned and snapped
  2. 1 pints - grape tomatoes
  3. 4 ounces - marinated feta cheese
  4. - almond oil or olive oil

Directions:

Toss the green beans with a small amount of oil, just enough to barely coat. Spread in a half sheet pan or cookie sheet and place in an oven to roast at 450°. Toss after 15 minutes. It generally takes 25-30 minutes for the beans to roast to my desired doneness, but roast them to your preference.

Toss the grape tomatoes with a small amount of oil to coat and spread on another pan. Wait until the green beans have been roasting for 10 minutes to put the tomatoes into the oven since they will roast much quicker than the beans. The tomatoes are done when the skins start to burst.

When the beans are done, spoon them into a serving dish and sprinkle the marinated feta over the beans so that the feta melts slightly into the beans. Spoon the roasted tomatoes over top, toss, and serve.
