Greek Walnut Cake

Ingredients:

  1. 2 cups - Bisquick
  2. 1 cups - sugar
  3. 1 cups - walnuts chopped
  4. 1 cups - milk
  5. 1 cups - oil
  6. 1 teaspoons - orange flavoring (OR fresh orange rind and juice amounts below)
  7. 2 tablespoons - or 3 Tbsp orange rind or the rind of 2 oranges grated
  8. 1/4 cups - orange juice
  9. 4 - eggs
  10. 1 1/2 teaspoons - baking powder
  11. 1/2 teaspoons - baking soda
  12. 1 1/2 teaspoons - cinnamon
  13. 1 teaspoons - nutmeg (OR 1/2 tsp, as desired)
  14. 1 teaspoons - cloves (OR 1/2 tsp, as desired)
  15. 1 cups - sugar
  16. 1 cups - water
  17. 1 - cinnamon stick
  18. 1 cups - cocoa powder
  19. 1 cups - granulated sugar
  20. 4 tablespoons - cornstarch
  21. 1 cups - water
  22. 6 tablespoons - margarine
  23. 1 dashes - salt
  24. 2 tablespoons - vanilla

Directions:

For cake - combine all cake ingredients; batter will seem runny, but it will puff and bake.

Grease pan. Bake at 350 degrees F for about 30 minutes.

To make syrup:

Combine sugar, water and cinnamon stick; boil and stir until thickened into a syrup. Pour over cake when baked.

Chocolate Icing:

Combine sugar, cocoa and cornstarch first. Add water in a steady stream. Place mixture on stove over medium-low heat, and cook, stirring constantly. Add margarine and stir in salt. Bring to a boil; boil for 3 minutes, stirring constantly. Add vanilla last.

Spread this quickly over cake as soon as it is cooled.
