Ingredients:
- 2 tablespoons - melted coconut oil
- 1 tablespoons - vanilla
- 1/4 teaspoons - almond extract
- 1/4 teaspoons - stevia or 1-2 tablespoon honey (I use stevia)
- 1 cups - unsweetened coconut flakes plain, unsulfured (not shredded coconut)
- 1/4 cups - raw sliced almonds
- 1/4 cups - pecan pieces
- 1 tablespoons - ground up flax seeds plus a little more, if desired
- 1 pinchs - cinnamon
- 1 pinchs - nutmeg and more spices, as desired
Directions:
Preheat oven to 300. Whisk all the liquid ingredients together.
Then mix in all the other ingredients in the order listed, making sure to coat coconut and nuts.
Bake about 7 minutes, stir, then bake another 7 minutes or till it’s toasty, crispy and golden brown. (Or use a baking stone and you don’t have to stir it.) It can burn quickly, so watch it carefully!
