In the PM
In bowl, add:
2 1/2 C warm water
2 heaping tsp yeast
Stir with whisk, let sit 5-10 minutes
In another bowl, add:
4 C unbleached flour
Combine. Add a little water so it is a somewhat sticky substance.
Cover with plastic wrap and let sit overnight at
room temperature.
In the AM
Add 1 tsp salt and 1/2 C ice water. Mix.
Add 2 1/2 C unbleached white flour.
Mix with wooden spoon.
Once not too sticky, flour counter and work dough
with hands to get lumps out ( don’t need to knead ).
Grease a bowl with olive oil.
Dump dough in bowl, flip over, so both sides are coated with oil.
Cover with plastic wrap, let rise about 3 hours Or until rises to the top of the bowl.
Flour counter, dump dough out, cut in 1/2.
Shape with hands into 2 round balls.
Put each one on greased cookie sheet.
Beat white of one egg, brush on eggs.
Sprinkle with sesame seeds.
Set oven to 450 degrees, wait 30 minutes, lower to 425 degrees and bake for 25 minutes.
