Grandmother's Texas Barbecued Brisket

Ingredients:

  1. 3 1/2 pounds - beef brisket
  2. 1 teaspoons - celery salt
  3. 1 teaspoons - garlic powder
  4. 1 teaspoons - onion salt
  5. 1/2 cups - barbecue sauce
  6. 2 tablespoons - ketchup
  7. 2 tablespoons - Worcestershire sauce
  8. 1/2 teaspoons - liquid smoke
  9. - fresh parsley sprigs for garnish

Directions:

1. Trim fat from brisket to 1/8-inch thickness.

2. Combine celery salt, garlic powder, and onion salt. Sprinkle brisket evenly with mixture, and rub thoroughly into meat.

3. Stir together barbecue sauce with ketchup, Worcestershire and liquid smoke until blended. Brush barbecue sauce mixture evenly onto brisket. Wrap brisket in heavy-duty aluminum foil; place in a roasting pan. Chill for 8 hours.

4. Bake at 300 degrees F for 5 hours or until a meat thermometer inserted in thickest portion registers 190 degrees F. Let stand 10 minutes. Cut brisket across the grain into thin slices. Garnish, if desired.
