Grama Kurtz's Salsa Soup

Ingredients:

  1. 1 whole - Onion finally chopped
  2. 1 cups - Corn Frozen corn, not on cob
  3. 1/2 packages - Frozen spinich
  4. 1 cans - Large can Diced Tomato
  5. 2 cups - Chicken stock Or water with chicken bouillon
  6. 1 cups - Salsa mild, medium, hot
  7. 1/2 cups - Orzo pasta
  8. 1 teaspoons - Garlic Powder
  9. 1/2 teaspoons - Cumin
  10. 1/2 teaspoons - Corriander
  11. - Salt and pepper to taste
  12. - Crumbled feta to top

Directions:

Sautee your onion, then add Diced tomato, Chicken stock and bring to a boil. Turn heat to simmer, and add your salsa, and frozen veggies. Once it comes back to a simmer, add your spices and pasta. Cook until pasta is soft. Serve with crumbled feta on top.
