Rolling out between parchment paper didn't really work for me. I just rolled the dough out on a lightly floured surface.

Ingredients:
- 1 cups - whole wheat flour
- 1 1/2 cups - all-purpose flour
- 1/2 cups - dark brown sugar packed
- 1/2 teaspoons - salt
- 1 teaspoons - cinnamon
- 1 teaspoons - baking soda
- 1/2 cups - butter chilled and cubed
- 1/4 cups - honey
- 1/4 cups - water
Directions:
Preheat oven to 350.
In mixer combine first 6 ingredients.
Add chilled butter and mix until it resembles coarse meal.
Add honey & water and mix until it all combines.
Remove and shape dough into flat disk. Place between 2 pieces of parchment paper.
Roll out dough to 1/4 inch thick. Cut into crackers or shapes.
Bake for 15 minutes on non-stick or Silpat-lined pan.
Cool and serve.
Store in air-tight container up to 5 days.
These freeze well. Lay flat in freezer bag with parchment paper between layers.
