Ingredients:
- 25 - to 40 pieces of boneless, skinless chicken thighs
- - cooked rice for serving with
- 1 cups - apricot jelly
- 1 cups - white wine or apple juice
- 1 packages - dry onion soup mix
- 1 cups - Kraft Russian salad dressing
- 2/3 cups - mayonnaise
- 1/2 cups - chili sauce
- 1 teaspoons - lemon juice
Directions:
Lightly brown chicken thighs in pan. Put chicken into an ovenproof deep dish.
Mix all the sauce ingredients together and pour over chicken pieces. Cook in oven for 1 hour at 350ºF.
Serve over rice.
Note: This recipe makes a lot of sauce. If you have too much for the chicken, I refrigerate it, heat it on stove and serve over pasta or rice at a subsequent meal.
Down memory lane: This recipe was handed down to me by a dear friend from Scotland when we first moved to Munster back in 1982. It is one of my favourites. I make it when I know there will be several members of the family coming to dinner because it makes a lot. My eldest grandson who usually very politely refuses any food I prepare, happened to be starving one day and actually took a bite of it. He ended up having 3 servings. Next day, his mother texted me for the recipe!
