Ingredients:
- 1 tablespoons - vegetable oil
- 2 pounds - Lean, boned bottom round roast cut into 1-inch cubes
- 2 cups - plum tomatoes diced
- 1 1/2 cups - red onion vertically sliced
- 1 cups - green bell pepper diced
- 1 cloves - garlic minced
- 2 cups - red potatoes peeled, cubed
- 1/3 cups - red wine
- 1/4 cups - water
- 1 tablespoons - lemon juice fresh
- 1 1/2 teaspoons - paprika
- 1 teaspoons - caraway seeds
- 1 teaspoons - marjoram dried
- 1/2 teaspoons - salt
- 1/2 teaspoons - pepper
- - beef broth
Directions:
Heat oil in a dutch oven over medium-high heat. Add beef, browning on all sides. Remove from pan. Add tomato, onion, bell pepper, and garlic - sautee for 10 minutes. Return beef to pan and stir in potatoes and remaining ingredients. Bring to a boil. Cover and reduce heat. Simmer for 1 1/2 hours or until beef is tender.
