Ingredients:
- 2/3 cups - unsalted butter, softened (1 stick = 1/2 cup)
- 8 ounces - cream cheese, softened
- 1 - large egg
- 1 teaspoons - vanilla extract
- 1 - package (15.25 oz.) Betty Crocker yellow OR lemon cake mix
- 1/4 cups - powdered sugar
Directions:
In a medium size bowl, beat together cream cheese and butter with electric mixer until creamy. Stir in egg and vanilla. Then add the cake mix and stir until well blended.
Refrigerate, covered, for 4 hours or overnight.
Preheat oven to 350 degrees F. Roll cookie dough into 1-inch balls, then roll in powdered sugar to coat and place 1 inch apart on an ungreased baking sheet. Gently press down the center of each ball with ring finger, then top with a sprinkle of extra powdered sugar before baking.
Bake for 10 to 12 minutes until set; remove and transfer to wire racks to cool. They taste even better after sitting in the fridge overnight - perfect for summer days.
