Ingredients:
- 3/4 cups - all-purpose flour
- 1/4 teaspoons - salt
- 1/4 teaspoons - baking powder
- 8 tablespoons - unsalted butter
- 1 3/4 ounces - unsweetened chocolate cut into pieces
- 1 3/4 ounces - bittersweet or semisweet chocolate cut into pieces
- 3 - large eggs
- 1/2 cups - sugar
- 1/2 cups - dark brown sugar
- 1 1/2 teaspoons - vanilla extract
- 1 cups - semisweet or dark chocolate chips, or coarsely chopped dark chocolate
- 2 - egg whites
- 1/2 cups - sugar
- 2 cups - sweetened, shredded coconut
- 1/2 teaspoons - vanilla extract
- 1/4 teaspoons - salt
Directions:
1. Preheat oven to 350 degrees with rack in highest position. Line an 8-by-8-inch pan with foil, leaving enough foil overhang on two opposite sides to use as handles.
2. Make brownie batter: In a small bowl, mix together flour, salt and baking powder and set aside. In a medium saucepan set over low heat, melt butter and unsweetened and bittersweet chocolates until about ¾ melted. Off heat, stir chocolate until smooth and completely melted.
3. Use an electric mixer with whisk attachment on medium-high to beat eggs, sugars and vanilla until tripled in volume, about 5 minutes. Slowly pour chocolate mixture into egg whites, continuing to mix until well combined. Add dry ingredients and mix until just combined, scraping down sides of bowl once or twice. Stir in chocolate chips. Set aside.
4. Make macaroon topping: In a medium saucepan over medium-low heat, constantly whisk egg whites and sugar until sugar has dissolved and temperature reaches 140 degrees, using a candy thermometer to monitor temperature. Off heat, stir in coconut. Place pan back on stove over low heat and cook, stirring, exactly 5 minutes. Off heat, stir in vanilla and salt.
5. Pour brownie batter into baking pan and carefully spread macaroon topping over top. Place in oven and bake until topping is golden, about 30 minutes. Remove from oven, and let cool on a rack.
