Goat Cheese Stuffed Burgers

Ingredients:

  1. 14 ounces - ground beef
  2. 2 pieces - goat cheese
  3. 2 tablespoons - ghee or duck fat plus more for burgers, if needed
  4. 1 - large yellow onion sliced
  5. 1 tablespoons - Sukrin Gold brown sugar substitute OR Erythritol or Swerve
  6. - pinch of sea salt

Directions:

Place goat cheese in freezer for 30 minutes (optional, but prevents cheese from oozing out while burgers are cooking).

Peel and slice onion; grease a skillet with ghee and add the onion slices. Cook on medium-low heat for 15 to 20 minutes, stirring occasionally, until caramelized.

Add brown sugar substitute to skillet and stir in well; cook for another 5 minutes, stirring, then remove from heat and set aside.

While onion is cooking, preheat oven to 400 degrees F. Create two 7 oz. patties; place a piece of cheese in the middle of each patty, and wrap the meat up around them, making sure the cheese is covered so it doesn't ooze out during cooking.

Grease an ovenproof skillet with a tablespoon of ghee; add burgers and cook on high for one minute on each side; season with salt.

Place skillet in preheated oven and let burgers cook for 7 to 8 minutes; then remove skillet from oven and let burgers rest for 5 minutes before serving.

Serve caramelized onions over top of the burgers.
