Ingredients:
- 3 pounds - sweet potatoes peeled, cubed
- 1/2 cups - half-and-half
- 1/4 cups - butter
- 2 ounces - goat cheese plus extra for topping
- 1/2 cups - pistachios roasted & salted, coarsely chopped
- - fresh sage or rosemary for garnish
Directions:
Place potatoes in a large saucepan.  Add enough water to cover.  Bring to a boil and add salt.  Reduce heat to medium high and simmer, covered, until potatoes are tender when pierced, about 10 minutes.  Drain and return to saucepan.
Heat half-and-half and butter in a glass bowl in the microwave for 1 minute.  Mash half-and-half mixture into the potatoes.  Stir in goat cheese.
Toast pistachios with butter and salt in a skillet.  Sprinkle pistachios, additional goat cheese, and fresh sage or rosemary over potatoes.
